Quick! A gluten-free picnic side-dish

Quinoa Salad

1 C quinoa
2 C water
1/2 t salt
1 C salsa
1 can black beans, drained and rinsed
1 can corn, drained
2 T olive oil
2 T minced garlic

Cook quinoa according to package directions (quinoa, water, salt). Combine with the rest of the ingredients (salsa, black beans, corn, olive oil, garlic) in a large bowl. Salt and pepper to taste. Chill.
